Why Offal Rules the Grill
On a whole animal butchered for the grill, the offal cooks fastest and tastes most intense — so it became the cook’s and the early crowd’s reward. In Xinjiang it is not a dare, it is a delicacy. The seasoning is the same as muscle meat: cumin, chili, salt, and that signature zira hit.

Liver (Gan)
Lamb liver is the gentle entry. Cubed, threaded with a sliver of tail fat to keep it moist, dusted in cumin. It eats like a dense, minerally pâté with a charred edge. Cooked medium, never well-done, or it turns chalky. A skewer is 3–5 RMB.
Heart (Xin)
Heart is my favorite — firm, slightly sweet, with a clean chew. It takes chili well and stays juicy. Often the first skewer to sell out at a popular stall because regulars call it in advance.
Kidney (Shen)
Stronger, more “organ” in flavor, trimmed of the white core so it isn’t bitter. For the committed. Ask the cook to slice it thin so it crisps.
Spleen and Tripe (Pi)
Less common but present: spleen (pi) is dense; tripe is chewy and usually par-cooked then grilled with heavy spice. These separate the curious from the converted.
