Lamb Offal Skewers in Xinjiang: Liver, Heart & the Brave Eater’s Kawap
If you only eat the cubed leg meat Xinjiang lamb skewers, you are missing half the grill. On any night-market row in Urumqi or Kashgar, next to the familiar yang rou chuan sit skewers of liver, heart, kidney, and even spleen — the offal kawap that locals fight over. I was hesitant on trip one, hooked by trip two. Here is the brave eater’s map.
Why Offal Rules the Grill
On a whole animal butchered for the grill, the offal cooks fastest and tastes most intense — so it became the cook’s and the early crowd’s reward. In Xinjiang it is not a dare, it is a delicacy. The seasoning is the same as muscle meat: cumin, chili, salt, and that signature zira hit.
The Offal Lineup
Liver (Gan)
Lamb liver is the gentle entry. Cubed, threaded with a sliver of tail fat to keep it moist, dusted in cumin. It eats like a dense, minerally pâté with a charred edge. Cooked medium, never well-done, or it turns chalky. A skewer is 3–5 RMB.
Heart (Xin)
Heart is my favorite — firm, slightly sweet, with a clean chew. It takes chili well and stays juicy. Often the first skewer to sell out at a popular stall because regulars call it in advance.
Kidney (Shen)
Stronger, more “organ” in flavor, trimmed of the white core so it isn’t bitter. For the committed. Ask the cook to slice it thin so it crisps.
Spleen and Tripe (Pi)
Less common but present: spleen (pi) is dense; tripe is chewy and usually par-cooked then grilled with heavy spice. These separate the curious from the converted.
| Cut | Flavor | Texture | Difficulty | Price/skewer |
|---|---|---|---|---|
| Liver | Rich, mineral | Tender | Easy | 3–5 RMB |
| Heart | Clean, sweet | Firm chew | Easy | 4–6 RMB |
| Kidney | Strong | Dense | Medium | 4–6 RMB |
| Spleen | Earthy | Dense | Hard | 5–7 RMB |
| Tripe | Smoky | Chewy | Hard | 4–6 RMB |

How to Order Without Fear
Point and use the numbers: “shi ge gan, wu ge xin” (ten liver, five heart). If unsure, start with liver and heart. Tell the cook “nen yi dian” (a bit rare/soft) for liver so it isn’t overcooked. Watch which skewers the local regulars grab — that stall is the good one. The kebab culture guide has more on reading a grill.
How it is actually eaten
Bread goes down first, tea arrives without being asked for, and the main dish comes when the people eating together are already sitting properly. If you are travelling solo and the thought of a room full of families bothers you, the counter seats at the small places are exactly the right answer. In Xinjiang Lamb Offal Kawap the meal is a long one, not a fast one. Eating alone here is a quiet business and the kitchen knows it. The short version, with the numbers, is in our [[xinjiang-lamb-skewers-kawap-guide|Xinjiang Lamb Skewers: Why They Taste…]].
How to order, and what a portion really costs
Card and phone payment both work everywhere in Xinjiang Lamb Offal Kawap. Order one less than you think, because the rice arrives in a bowl the size of a small basin and the second helping does not need ordering. Tips are not expected in the small places and are quietly welcome where there is table service, but do not build the visit around it. The number on the board is for one, and one here is enough for a European adult if you share two. Where most people get the logistics wrong is covered in our [[xinjiang-mug-lamb-guide|Xinjiang Mug Lamb Guide]].
Where to Try Them
Urumqi‘s Hongshan and the Grand Bazaar back streets; Kashgar old-town night market (see the street food guide); and any Urumqi food crawl after dark. The offal moves fast, so go before 9 pm.
Budgets in figures
Is lamb liver safe to eat a little pink?
Locally it’s served just-cooked. For travelers, I’d eat it properly cooked through but not cremated — a firm-but-moist center. If you’re immune-compromised, stick to well-done muscle meat.
What does heart taste like?
Milder than you’d guess — like a dense, slightly sweet lean steak with no gamey edge. It’s the best offal starter and the one most visitors end up loving.
Why is there fat on the liver skewer?
A sliver of tail or belly fat bastes the lean liver as it grills, keeping it from drying. You can ask for it without, but you’ll lose some flavor.
Can I get offal at a restaurant, not just a stall?
Yes. Uyghur restaurants often list gan chuan and xin chuan on the menu, and whole-roast-lamb feasts always include grilled offal as part of the spread.
